  • ¼ cup (50g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup (90g) rolled oats (not quick oats)
  • ½ cup (60g) all-purpose flour
  • ½ cup (100g) packed brown sugar (light or dark)
  • ½ cup (113g or 1 stick) cold unsalted butter, cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Wash and dry the apples.
  2. Core the apples and cut them into ½-inch chunks. Peeling is optional.
  3. In a large mixing bowl, combine the apple chunks, granulated sugar, lemon juice, 1 tablespoon flour, 1 teaspoon cinnamon, and vanilla extract. Toss until evenly coated. Set aside.
  4. In the same bowl, add the rolled oats, ½ cup flour, brown sugar, ½ teaspoon cinnamon, and salt. Stir to combine.
  5. Add the cold butter cubes. Using a pastry cutter, fork, or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter pieces remaining. Do not overmix.
  6. Lightly grease an 8×8-inch baking dish with butter or cooking spray. Pour the apple mixture into the dish and spread evenly.
  7. Sprinkle the oat crumble evenly over the apples. Do not press it down.
  8. Bake on the middle rack for 35 to 40 minutes, until the filling is bubbly around the edges and the topping is deep golden brown. If the crumble browns too quickly, tent loosely with foil for the last 10 minutes.
  9. Let the crisp rest on a wire rack for at least 10 minutes before serving to allow the juices to thicken.
  10. Serve warm, optionally with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

For best results, use cold butter and do not overmix the crumble. Let the crisp rest after baking to allow the juices to thicken.
