Ingredients

  • Sharp cheddar cheese, cubed (8 oz)
  • Gouda or smoked gouda, sliced (6 oz)
  • Brie cheese, whole wheel (4-6 oz)
  • Cream cheese, softened (4 oz)
  • Candy corn (1 cup)
  • Chocolate-covered pretzels (1/2 cup)
  • Mini peanut butter cups (1/2 cup)
  • Salami or pepperoni slices (4 oz)
  • Black olives, pitted (1/2 cup)
  • Roasted almonds or pecans (1/2 cup)
  • Butter crackers (like Ritz or Club crackers) (1 cup)
  • Pretzel sticks (1 cup)
  • Apple slices (1 apple, sliced)
  • Mini plastic spiders or skeleton hands (optional)
  • Fresh rosemary sprigs (optional)
  • Orange and black sprinkles (optional)

Instructions

  1. Start with the cheese. Cube the sharp cheddar into 1-inch pieces. Slice the gouda into thin triangles. Place the whole brie wheel on the board, slightly off-center. Arrange the cream cheese in a small bowl or directly on the board. Tip: Let the brie sit at room temperature for 15 minutes before serving.
  2. Add the candy corn and sweets. Pour the candy corn into a small bowl or pile it directly on the board in a little mound. Scatter a few pieces around for a messy, fun look. Place the chocolate-covered pretzels and peanut butter cups in another small bowl or cluster them together.
  3. Lay down the savory items. Fold the salami slices into quarters and arrange them in a little pile. Scatter the black olives around. Add the almonds or pecans in small clusters.
  4. Fill in with crackers and dippers. Arrange the butter crackers in a fan pattern around the cheese. Place the pretzel sticks in a little bundle. Add the apple slices near the brie. Warning: Toss the apple slices in a little lemon juice to keep them from browning.
  5. Add the spooky decorations. Place the mini plastic spiders on the board (make sure they’re clean!). Tuck the rosemary sprigs around the edges. Sprinkle the orange and black sprinkles over the cream cheese.
  6. Final check. Step back and look at your board. Is there any empty space? Fill it with extra crackers or a few more candy corns. The board should look abundant and inviting.

Notes

Assemble the board up to 2 hours in advance and refrigerate. Take it out 15 minutes before serving to soften the brie. For a gluten-free version, use gluten-free crackers and pretzels. For a vegan version, use vegan cheese and dairy-free chocolate. Toss apple slices in lemon juice to prevent browning.
