  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 large bell pepper (any color), diced
  • 1 cup salsa (medium heat)
  • 1 can black beans, drained and rinsed
  • 1 cup frozen or canned corn
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup chicken or vegetable broth
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges

Instructions

  1. Heat a large skillet over medium-high heat for 2 minutes. Add 1 tablespoon olive oil and swirl to coat.
  2. Add diced onion and bell pepper. Cook for 4-5 minutes, stirring occasionally, until onion is translucent and peppers soften.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Push vegetables to one side of the pan. Add ground turkey and let cook undisturbed for 2-3 minutes to brown. Then break apart and cook until no pink remains, about 5-6 minutes total.
  5. Drain excess liquid if needed, leaving about 1 tablespoon in the pan.
  6. Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir and let spices toast for 1 minute.
  7. Pour in salsa and broth, scraping up browned bits from the bottom of the pan.
  8. Add drained black beans and corn. Stir to combine.
  9. Bring to a gentle simmer, then reduce heat to medium-low. Cover and cook for 8-10 minutes.
  10. Taste and adjust seasoning as needed.
  11. Remove from heat and let rest, covered, for 5 minutes.
  12. Garnish with fresh cilantro and a squeeze of lime just before serving.

Notes

This skillet tastes even better the next day as flavors meld. For a vegetarian version, swap ground turkey with two cans of black beans or plant-based ground meat. To prevent drying out, don’t overcook and use enough liquid. Let the skillet rest covered for 5 minutes after cooking.
