  • 6 bone-in, skin-on chicken thighs
  • 3 bell peppers (red, yellow, and green), sliced
  • 4 garlic cloves, minced
  • 1/2 cup honey
  • 1/3 cup low sodium soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil (optional)
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat 6 bone-in, skin-on chicken thighs dry with paper towels. Season both sides lightly with salt and freshly ground black pepper. (5 minutes)
  2. Core and thinly slice 3 bell peppers (red, yellow, and green). Set aside. (5 minutes)
  3. In a medium bowl, whisk together 1/2 cup honey, 1/3 cup low sodium soy sauce, 2 tablespoons apple cider vinegar, and 4 minced garlic cloves. Add 1/4 teaspoon red pepper flakes if desired. (5 minutes)
  4. Place the chicken thighs skin-side down in the crockpot. Pour the honey garlic sauce evenly over the chicken. Scatter the sliced bell peppers on top and around the chicken. (2 minutes)
  5. Cover and cook on low for 5-6 hours, or on high for 3-4 hours, until chicken reaches an internal temperature of 165°F and is tender. (5-6 hours on low or 3-4 hours on high)
  6. About 15 minutes before serving, carefully remove the chicken and peppers. For a thicker sauce, transfer cooking liquid to a saucepan and simmer for 5-7 minutes until syrupy. Pour sauce over chicken and garnish with chopped parsley. (15 minutes)

Notes

Use bone-in, skin-on chicken thighs for best flavor and juiciness. For gluten-free, substitute soy sauce with tamari. To avoid mushy peppers, slice thicker or add halfway through cooking. Resist opening the crockpot frequently to maintain heat. Optionally broil chicken briefly after cooking for crispier skin.
