Easy Crockpot White Chicken Chili with Cream Cheese

This creamy white chicken chili is made effortlessly in the crockpot with cream cheese, chicken, beans, and corn. It’s a comforting, crowd-pleasing meal perfect for busy weeknights or cold weather.

  • 1.5 pounds boneless, skinless chicken breasts (about 3 medium)
  • 8 ounces block cream cheese, softened to room temperature
  • 2 (15-ounce) cans great northern beans, drained and rinsed
  • 2 (4-ounce) cans diced green chiles
  • 1 cup frozen corn
  • 2 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional toppings: fresh cilantro, shredded cheese, sliced jalapeños, sour cream, avocado, tortilla chips, lime wedges

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart or larger slow cooker. Trim off any visible fat.
  2. Add the drained and rinsed great northern beans and frozen corn (no need to thaw).
  3. Add the undrained diced green chiles.
  4. Sprinkle the cumin, garlic powder, onion powder, salt, and pepper evenly over the ingredients. Stir briefly to distribute.
  5. Pour the chicken broth over everything. It should mostly cover the chicken.
  6. Cut the softened cream cheese into 4-5 chunks and place them on top of the liquid. Do not stir.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and shreds easily.
  8. Carefully remove the chicken to a cutting board and shred with two forks.
  9. Return the shredded chicken to the slow cooker. Stir until the cream cheese is fully incorporated and the chili is smooth and creamy.
  10. Taste and adjust seasoning as needed. Serve hot with desired toppings.

Notes

Make sure cream cheese is at room temperature for smooth melting. Use low heat for best flavor and texture. For a thicker chili, cook uncovered for 15-20 minutes. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
