  • 2 medium sweet potatoes, peeled and diced into ½-inch cubes
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, tortilla chips

Instructions

  1. Brown the ground turkey: Heat a large skillet over medium-high heat with a drizzle of olive oil. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and crumbly (6-8 minutes). Transfer to the crockpot using a slotted spoon, leaving drippings in the pan.
  2. Sauté the onion and garlic: In the same skillet, cook the diced onion over medium heat for about 3 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant. Scrape the onion and garlic into the crockpot, including any browned bits.
  3. Add the sweet potatoes: Peel and dice the sweet potatoes into ½-inch cubes and add them directly to the crockpot.
  4. Add the canned ingredients: Open the cans of diced tomatoes, tomato sauce, kidney beans, and black beans. Drain and rinse the beans thoroughly. Add everything to the crockpot, including the juice from the diced tomatoes.
  5. Add the broth and spices: Pour in the chicken broth. Add the chili powder, cumin, smoked paprika, salt, and pepper. Stir everything together until well combined.
  6. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the sweet potatoes are tender.
  7. Taste and adjust: Before serving, stir the chili and adjust seasoning if needed. If too thin, cook uncovered for 15-20 minutes to thicken.
  8. Serve: Ladle into bowls and top with desired toppings.

Notes

For best flavor, brown the turkey first. Cut sweet potatoes uniformly for even cooking. Chili improves overnight. To thicken, remove lid for last 30 minutes or mash some sweet potato cubes. Freezes well for up to 3 months.
