Easy Crockpot French Onion Soup Recipe with Melty Gruyère Toast

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 6 cups (1.4 liters) beef broth (low-sodium preferred)
  • 1/2 cup (120 ml) dry white wine (optional)
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 34 sprigs fresh thyme or 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 8 slices baguette, about 1/2-inch thick
  • 2 cups shredded Gruyère cheese (about 200g)

Instructions

  1. Peel and thinly slice 4 large yellow onions (about 10 minutes).
  2. Melt 3 tablespoons unsalted butter in a large skillet over medium heat. Add sliced onions and a pinch of salt, stirring occasionally. Cook for about 20 minutes until soft and starting to brown.
  3. Transfer caramelized onions to the crockpot. Add 6 cups beef broth, 1/2 cup dry white wine (if using), 2 minced garlic cloves, 2 bay leaves, and 3-4 sprigs fresh thyme. Stir gently to combine.
  4. Cover and cook on low for 6 to 8 hours. Alternatively, cook on high for 4 hours (less rich flavor).
  5. About 15 minutes before soup is ready, preheat broiler. Slice baguette into 8 half-inch thick slices. Toast under broiler 1-2 minutes per side until golden and crisp.
  6. Remove toasted baguette slices from oven. Pile shredded Gruyère cheese generously on each slice. Return to broiler until cheese melts, bubbles, and turns lightly golden (about 2-3 minutes). Watch carefully to avoid burning.
  7. When crockpot time is up, remove bay leaves and thyme sprigs. Taste and adjust salt and pepper as needed.
  8. Ladle soup into oven-safe bowls, top each with a cheesy toast slice, and optionally broil for 1 minute to get cheese extra bubbly and browned.

Notes

Sautéing onions before slow cooking develops deeper caramelized flavor. Use low and slow setting on crockpot for best results. Watch cheese toast carefully under broiler to prevent burning. Adjust seasoning after cooking. For vegetarian version, use vegetable broth and skip wine. For gluten-free, use gluten-free bread.
