Ingredients

Scale
  • 2 to 2.5 pounds beef chuck roast or round steak
  • 1/2 cup low-sodium soy sauce or tamari
  • 1/2 cup beef broth
  • 3 tablespoons brown sugar or coconut sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups broccoli florets (about 2 medium heads)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Slice the beef: Place the chuck roast in the freezer for about 15 minutes to firm up, then slice into thin strips (about 1/4 inch thick) against the grain.
  2. Make the sauce: In a medium bowl, whisk together soy sauce, beef broth, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger.
  3. Layer the crockpot: Place the sliced beef in the bottom of a 5-6 quart crockpot. Pour the sauce over the top and toss with tongs to coat every piece.
  4. Slow cook: Cover and cook on low for 6-7 hours or on high for 4 hours, until the beef is fork-tender.
  5. Add the broccoli: About 30 minutes before serving, stir in the broccoli florets. Cover and cook on high for 20-30 minutes, until bright green and just tender.
  6. Thicken the sauce: In a small bowl, mix cornstarch and water until smooth. Stir the slurry into the crockpot and cook uncovered for 5-10 minutes, stirring occasionally, until the sauce thickens to a glossy consistency.
  7. Final seasoning: Taste and adjust with red pepper flakes if desired. Serve immediately over steamed rice or cauliflower rice.

Notes

For the most tender beef, slice against the grain and cook on low. Add broccoli only in the last 30 minutes to avoid mushiness. For a deeper flavor, sear the beef in a hot skillet before adding to the crockpot. Leftovers keep in the fridge for up to 4 days and freeze well for up to 3 months.
