  • 45 hot dogs, sliced into thin rounds
  • 2 large eggs, beaten, room temperature
  • 1 small onion, finely chopped
  • 1/2 cup frozen peas (or fresh)
  • 1/2 cup diced carrots
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil (canola or sunflower)
  • Salt and black pepper to taste
  • 2 stalks green onions, sliced thin

Instructions

  1. Prep your ingredients: Slice the hot dogs into thin rounds, finely chop the onion, garlic, carrots, and slice green onions. Beat the eggs lightly in a bowl and set aside. This step should take about 5-7 minutes.
  2. Heat your skillet: Add 1 tablespoon of vegetable oil over medium-high heat. Once shimmering, add the hot dog slices. Cook for 3-4 minutes until browned and slightly crispy around the edges. Remove and set aside.
  3. Sauté veggies and garlic: In the same pan, add the remaining 1 tablespoon of oil. Toss in the onion, carrots, and garlic. Stir frequently for 3-4 minutes until softened and fragrant but not browned. Add the peas last and cook for another minute.
  4. Cook the eggs: Push the veggies to one side of the pan. Pour the beaten eggs into the cleared space. Let them sit undisturbed for about 20 seconds, then gently scramble until just cooked but still soft. Mix eggs with the veggies.
  5. Add rice and hot dogs: Break up any clumps of the leftover rice with your fingers or a spoon. Add rice and hot dogs back into the pan. Spread it out evenly and let it cook without stirring for about 2 minutes, allowing the rice to get crispy on the bottom.
  6. Season: Drizzle the soy sauce and sesame oil evenly over the rice. Stir everything together and cook for another 2-3 minutes, letting some more crispiness develop. Taste and adjust with salt and pepper as needed.
  7. Finish and garnish: Remove from heat, sprinkle sliced green onions on top, and give everything a final toss. Serve hot.

Notes

Use day-old rice for best texture. Cook over medium-high heat and let rice sit undisturbed to develop crispiness. If rice feels dry, splash a teaspoon of water before adding soy sauce. For gluten-free, substitute soy sauce with tamari. Avoid overcrowding the pan; cook in batches if needed. Reheat leftovers in a skillet with a splash of water or oil to revive crispiness, avoid microwaving.
