Easy Creamy Greek Yogurt Bark with Berries & Granola

A quick and easy frozen treat made with creamy Greek yogurt, fresh berries, and crunchy granola. Perfect for a healthy breakfast, snack, or dessert.

Ingredients

  • 2 cups (480g) plain Greek yogurt, full-fat or 2%
  • 2 tablespoons (30ml) honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 cup (150g) mixed berries, fresh or frozen
  • 1/2 cup (60g) granola
  • 2 tablespoons (15g) unsweetened shredded coconut (optional)
  • 1 tablespoon (10g) chia seeds (optional)

Instructions

  1. Line a baking sheet with parchment paper, leaving overhang on the sides.
  2. In a small bowl, whisk together the Greek yogurt, honey (if using), and vanilla extract until smooth.
  3. Pour the yogurt mixture onto the center of the prepared pan. Spread into an even rectangle, about 1/4 to 1/2 inch thick.
  4. Scatter the mixed berries evenly over the yogurt. Press them down gently. Sprinkle the granola over the top and press in slightly. Add shredded coconut and chia seeds if using.
  5. Place the baking sheet in the freezer on a flat surface. Freeze for at least 2-3 hours, or until completely solid.
  6. Remove from freezer and let sit at room temperature for 2-3 minutes. Use the parchment overhang to lift the bark onto a cutting board. Break into pieces with your hands or cut into squares.
  7. Serve immediately or store in a freezer-safe bag or container.

Notes

For best results, use full-fat or 2% Greek yogurt for creaminess. If using frozen berries, do not thaw them first. Press toppings gently into the yogurt to prevent them from falling off. Let bark sit at room temperature for 2-3 minutes before breaking to avoid shattering.
