A quick and comforting miso ramen recipe with creamy broth and a perfectly soft-boiled egg, ideal for dorm rooms or small kitchens.

  • 1 package instant ramen noodles (discard seasoning packet)
  • 1 cup whole milk (or any dairy/plant-based milk)
  • 2 large eggs (for soft-boiled eggs)
  • 2 green onions, thinly sliced
  • Optional: a few drops sesame oil
  • Optional: sriracha or chili flakes
  • Optional: frozen spinach or bok choy

Instructions

  1. Bring about 2 cups (16 fl oz) of water to a gentle boil in a small pot.
  2. Carefully lower 2 large eggs into the boiling water using a spoon and boil for exactly 6 minutes.
  3. Transfer eggs to a bowl of ice water to stop cooking.
  4. In the same pot, add 2 cups (16 fl oz) of water and bring to a boil.
  5. Add instant ramen noodles and cook according to package instructions, usually 3-4 minutes.
  6. Drain noodles, reserving about ½ cup (4 fl oz) of the cooking water.
  7. In a small bowl, whisk together 2 tablespoons miso paste with 1 cup (8 fl oz) milk and the reserved noodle water until smooth.
  8. Pour the mixture back into the pot and warm gently on low heat, stirring constantly for 2-3 minutes without boiling.
  9. Add the drained noodles to the pot and stir to coat evenly with the creamy miso broth. Heat for an additional 1-2 minutes.
  10. Peel the cooled eggs under running water and slice in half lengthwise.
  11. Ladle noodles and broth into bowls, top with soft-boiled eggs, sliced green onions, and drizzle with sesame oil or chili if desired.

Notes

Do not add miso paste directly to boiling water to preserve probiotics and flavor. Timing the soft-boiled egg precisely is key for a custardy yolk. Use milk or plant-based milk for creaminess. Adjust broth saltiness by adding extra milk or water if needed. Leftovers keep well refrigerated for up to 2 days; reheat gently with a splash of milk or water.
