These easy cranberry brie bites are the perfect party appetizer, featuring flaky puff pastry, creamy melted brie, and tart cranberry sauce. Ready in under 20 minutes, they’re a crowd-pleasing treat that looks impressive with minimal effort.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes
  • 1/3 cup whole berry cranberry sauce
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 large egg, beaten with 1 tablespoon water
  • Optional: flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Gently roll it out just slightly—about 1/8-inch thick—to smooth out the creases from the fold. You want it to be an even rectangle, roughly 10×12 inches.
  3. Using a sharp knife or pizza cutter, cut the pastry into 24 equal squares (4 rows by 6 rows).
  4. Place the squares on the baking sheet about 1 inch apart.
  5. Using the tip of a sharp knife, lightly score a small border about 1/4 inch from the edge of each square. Don’t cut all the way through—just a shallow line.
  6. If you haven’t already, cut the rind off the brie and slice it into 24 small cubes, about 1/2 inch each.
  7. Place one cube of brie in the center of each pastry square. Top with about 1/2 teaspoon of cranberry sauce.
  8. Gently brush the exposed edges of each pastry square with the beaten egg and water mixture.
  9. Finely chop the fresh rosemary and sprinkle a tiny pinch over each bite. Then add a small sprinkle of flaky sea salt if using.
  10. Bake for 12-15 minutes until the pastry is golden brown and puffed, and the brie is melted and bubbly.
  11. Let them rest on the baking sheet for 3-5 minutes before serving.

Notes

Keep the pastry cold for best results. Work quickly, and if the pastry starts feeling sticky or soft, pop the baking sheet in the fridge for 10 minutes before baking. Don’t skip the egg wash—it gives a glossy, golden-brown finish. Cut the brie while it’s cold for clean cubes. Watch the oven closely after the 12-minute mark to avoid burning. Assemble up to 4 hours ahead and refrigerate; add 2-3 minutes to baking time if starting from cold.
