  • 1/4 cup (57 g) unsalted butter, softened
  • 1/3 cup (70 g) packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 1/4 cup (30 g) chopped walnuts or pecans (optional)
  • 1/4 cup (40 g) raisins or dried cranberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Peel and finely grate one medium tart apple. Set aside.
  3. In a medium bowl, combine rolled oats, all-purpose flour, ground cinnamon, baking powder, and salt. Whisk together to evenly distribute.
  4. In a large bowl, beat softened unsalted butter with packed brown sugar until smooth and slightly fluffy, about 2-3 minutes.
  5. Mix in the large room-temperature egg and vanilla extract until combined.
  6. Gradually add the dry oat-flour mixture to the wet ingredients, mixing gently until just combined. Avoid overmixing.
  7. Fold in the grated apple and optional nuts or dried fruit if using.
  8. Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 12-15 minutes until edges are lightly golden but centers remain soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
