This easy Cajun butter injected turkey is proof that you don’t need hours of prep or a culinary degree to make a showstopping dinner. It’s quick, forgiving, and delivers juicy, flavorful turkey from the inside out, perfect for weeknights or special occasions.

Ingredients

  • Turkey breast or whole turkey (3-5 lbs / 1.4-2.3 kg)
  • Unsalted butter (1/2 cup / 1 stick / 113 g), melted
  • Cajun seasoning (2 tablespoons)
  • Garlic powder (1 teaspoon)
  • Onion powder (1 teaspoon)
  • Smoked paprika (1 teaspoon)
  • Salt (1 teaspoon)
  • Black pepper (1/2 teaspoon), freshly ground
  • Cayenne pepper (1/4 teaspoon, optional)
  • Olive oil (1 tablespoon)

Instructions

  1. Melt the butter in a small saucepan over low heat. Do not let it boil. Remove from heat and stir in the Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne (if using). Whisk until combined. Let cool for 2-3 minutes until warm but not hot.
  2. Pat the turkey dry with paper towels. Fill the meat injector with the butter mixture. Insert the needle deep into the thickest parts of the turkey (breast, thighs, drumsticks) and inject slowly, about 1-2 tablespoons per spot, pulling the needle out gradually. Repeat at 6-8 injection points for a breast, more for a whole bird. Rub any remaining butter mixture all over the outside of the turkey. Drizzle with olive oil and rub in.
  3. Preheat oven to 375°F (190°C). Place turkey in a roasting pan, breast side up. Roast for about 20 minutes per pound, or until internal temperature reaches 165°F (74°C) in the thickest part of the breast. A 4-pound breast takes about 80 minutes. Start checking at 60 minutes. If skin gets too dark, tent loosely with foil. Let turkey rest for 15 minutes before carving.

Notes

Don’t skip the resting step—let turkey rest 15 minutes before carving to keep juices in. Watch salt content of Cajun seasoning; start with less salt and adjust. If butter mixture has spice chunks, strain through a fine-mesh sieve to prevent clogging the injector. For extra crispy skin, broil for last 3-5 minutes, watching closely. Use room-temperature turkey for even cooking.
