Instructions

  1. Cream the butter and sugar: In a mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3 minutes. Scrape down the sides halfway through.
  2. Add the wet ingredients: Beat in the egg, vanilla extract, and almond extract (if using) until fully combined. The mixture may look slightly curdled; that’s normal.
  3. Mix the dry ingredients separately: In a medium bowl, whisk together the flour, baking powder, and salt.
  4. Combine wet and dry: Gradually add the flour mixture to the butter mixture, mixing on low speed in three additions, scraping the bowl between each. Stop mixing as soon as the dough comes together. The dough should be soft but not sticky; if too sticky, add a tablespoon of flour.
  5. Add the black food coloring: Switch to a spatula and add about 1 teaspoon of black gel food coloring. Fold it into the dough until combined. Add more coloring, a few drops at a time, until you reach a deep black (about 1 1/2 teaspoons total). Wear disposable gloves to avoid staining hands.
  6. Let the dough rest: Cover the bowl with plastic wrap and let it sit at room temperature for 10 minutes. This allows the color to deepen and the gluten to relax.
  7. Preheat and prep: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  8. Roll out the dough: Lightly flour your work surface and rolling pin. Roll the dough to about 1/4-inch thickness. Use two wooden dowels or chopsticks on either side for even thickness.
  9. Cut the shapes: Dip a cat-shaped cookie cutter in flour before each cut. Press straight down and wiggle to release. Use an offset spatula to transfer cut cookies to the baking sheet, leaving about 2 inches between them.
  10. Add the eyes (before baking): Gently press two candy eyes into each cookie, positioned close together toward the front of the cat face. Create a tiny indent around each eye with your fingertip to help them stay in place.
  11. Bake: Bake for 8-10 minutes, rotating the pan halfway through. The cookies are done when the edges are set and the bottoms are just barely golden. They will look slightly underdone in the center.
  12. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use gel food coloring for true black color; liquid will turn gray. Let dough rest after coloring for deeper color. For best texture, don’t overmix or overbake. Cookies taste even better the next day.
