  • ¼ cup packed brown sugar (50 g)
  • 1 tablespoon all-purpose flour (8 g)
  • 1 tablespoon lemon juice (15 ml)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats (90 g)
  • ¾ cup all-purpose flour (90 g)
  • ½ cup packed brown sugar (100 g)
  • ½ cup unsalted butter, cold and cubed (113 g)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup chopped pecans or walnuts (optional, 60 g)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice pears into ½-inch thick pieces.
  3. In a medium bowl, combine sliced pears, ¼ cup brown sugar, 1 tablespoon flour, lemon juice, 1 teaspoon cinnamon, nutmeg, and vanilla. Stir gently to coat. Let sit while making topping.
  4. In another medium bowl, whisk together oats, ¾ cup flour, ½ cup brown sugar, ½ teaspoon cinnamon, and salt. Add cold cubed butter. Use a pastry cutter, forks, or fingertips to work butter into dry ingredients until mixture resembles coarse meal with some pea-sized butter chunks. Stir in nuts if using.
  5. Pour pear mixture into an ungreased 8×8-inch baking dish and spread evenly. Sprinkle oat crumble evenly over the top.
  6. Place dish on a baking sheet and bake for 35-40 minutes, until topping is golden brown and filling is bubbling around the edges.
  7. Let cool on a wire rack for at least 10 minutes before serving.

Notes

For best results, use a mix of firm and slightly soft pears. Keep butter cold for a crunchy topping. Let crisp rest 10-15 minutes after baking to allow filling to set. If topping browns too quickly, tent with foil for last 10 minutes.
