This Easy Baked Brie Crostini with Hot Honey and Rosemary is a quick, impressive appetizer that combines creamy melted brie, crunchy crostini, and a sweet-spicy honey drizzle. Ready in 20 minutes, it’s perfect for hosting and always a crowd-pleaser.

Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • 1 French baguette (about 12–14 inches long)
  • 3 tablespoons honey
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/2 teaspoon red pepper flakes
  • Flaky sea salt, for finishing
  • Optional: 2 tablespoons toasted walnuts or pecans

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice the baguette into 1/2-inch thick rounds (about 20-24 slices). Arrange in a single layer on the prepared baking sheet.
  3. Toast the crostini for 5-7 minutes, until edges are golden and centers are slightly soft. Remove from oven and set aside. Leave the oven on.
  4. While crostini toast, let the brie sit at room temperature for 10 minutes if the rind is firm. Place the whole wheel of brie on a small piece of parchment paper on the baking sheet.
  5. In a small saucepan over low heat, combine honey, chopped rosemary, and red pepper flakes. Warm gently for 2-3 minutes, stirring occasionally, until honey is loose and rosemary is fragrant. Do not boil.
  6. Pour about half of the warm honey mixture over the top of the brie, letting it pool around the edges.
  7. Bake the brie for 8-10 minutes, until soft and slightly puffed but still holding its shape. The center should give way like a ripe avocado when gently pressed.
  8. Carefully transfer the baked brie to a serving platter. Arrange toasted crostini around it. Drizzle remaining warm honey mixture over the top and around the platter. Sprinkle with flaky sea salt and optional toasted nuts.
  9. Serve immediately, encouraging guests to spread the brie onto the crostini.

Notes

Don’t overbake the brie—it should be warm and soft, not liquid. Slice the baguette evenly for even toasting. Make the hot honey ahead of time and store at room temperature. Use room temperature brie for even melting. Double the recipe for a crowd.
