  • 1 can (15 oz) pumpkin purée (not pumpkin pie filling)
  • 1 can (12 oz) evaporated milk
  • 1 cup granulated sugar
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup unsalted butter, melted
  • Optional: 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the pumpkin purée, evaporated milk, granulated sugar, and pumpkin pie spice (if using) until smooth.
  3. Pour the pumpkin mixture into the prepared baking dish and spread it evenly.
  4. Sprinkle the entire box of dry yellow cake mix evenly over the pumpkin mixture. Do not stir.
  5. Pour the melted butter evenly over the dry cake mix. Do not stir.
  6. Bake for 50-60 minutes, or until the top is deep golden brown and the edges are bubbly. The center should be set but still have a slight jiggle.
  7. Let the cake cool on a wire rack for at least 20-30 minutes before serving.

Notes

Do not stir the cake mix into the pumpkin mixture; the layers should remain distinct. For a crumblier topping, use cold butter sliced into thin pats instead of melted butter. The cake is even better the next day as flavors meld. If the top browns too quickly, tent with foil for the last 15 minutes.
