  • 1 large head fresh broccoli, cut into bite-sized florets
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 stalks green onions, sliced
  • 3 tablespoons soy sauce (low-sodium recommended)
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon rice vinegar
  • 2 tablespoons water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
  • 1 teaspoon toasted sesame oil
  • Cooking oil (optional, for pan)

Instructions

  1. Wash and dry broccoli thoroughly. Cut into florets, chopping stems into small pieces. Mince garlic, grate ginger, and slice green onions. Whisk soy sauce, oyster sauce, brown sugar, rice vinegar, 2 tablespoons water, and cornstarch slurry in a small bowl until smooth. Set aside.
  2. Heat a large 12-inch skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Cook until browned and no longer pink (about 8 minutes). If there is excessive grease, drain it, leaving about a tablespoon. Remove beef from pan and set aside.
  3. Reduce heat to medium. Add a splash of oil to the same pan. Add broccoli florets and stems. Stir-fry for 3-4 minutes until charred and tender-crisp. If the pan gets too dry, add a splash of water and cover with a lid for 1 minute to steam slightly.
  4. Return cooked beef to the pan with the broccoli. Add minced garlic and grated ginger. Stir constantly for 30 seconds until fragrant. Pour the prepared sauce over the mixture. Toss gently until the sauce thickens and coats everything evenly.
  5. Remove pan from heat. Drizzle with toasted sesame oil and toss one last time. Sprinkle with sliced green onions. Serve immediately over steamed rice or cauliflower rice.

Notes

Do not overcrowd the pan when browning beef to ensure proper searing rather than steaming. Ensure broccoli is dry before cooking to prevent steaming. Mix cornstarch slurry well before adding as it settles. Add sesame oil at the very end to prevent burning. Leftovers store in the refrigerator for up to 3 days; do not freeze as broccoli texture suffers.
