  • 2 tablespoons (30 ml) good-quality liquid honey
  • 1 teaspoon (5 ml) fresh lemon juice (optional)
  • A pinch of sea salt
  • Parchment paper for cutting

Instructions

  1. Chill the honeycomb in the refrigerator for about 20 minutes to firm it up.
  2. Lay down a large piece of parchment paper on your cutting board to catch sticky drips.
  3. Remove the honeycomb from the fridge and place it on the parchment paper.
  4. Using a sharp chef’s knife, cut the honeycomb into bite-sized pieces about 1 to 1.5 inches wide, using smooth, deliberate strokes to hear the satisfying snap.
  5. In a small bowl, whisk together the liquid honey, fresh lemon juice (if using), and a pinch of sea salt to make a drizzle.
  6. Arrange the honeycomb pieces on a serving plate and lightly drizzle the honey mixture over the top.
