Crowd-Pleasing Cheesy Stuffed Acorn Squash: Easy Fall Recipe

This cheesy stuffed acorn squash is the perfect fall dish—tender roasted squash filled with a rich, savory mixture of melted cheese, quinoa, toasted pecans, and dried cranberries. It’s a crowd-pleaser that converts even squash skeptics.

  • 2 medium acorn squash, halved and seeded
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 cup cooked quinoa (about 1/3 cup dry)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 4 ounces cream cheese, softened
  • 1/2 cup toasted pecans, chopped
  • 1/3 cup dried cranberries
  • 3 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon smoked paprika
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Carefully cut each acorn squash in half from stem to tip. Scoop out the seeds and stringy bits with a spoon. Brush the cut sides and cavities with olive oil, then season generously with salt and pepper. Place the halves cut-side down on the baking sheet.
  3. Roast the squash for 25-30 minutes, until the flesh is fork-tender but still holds its shape.
  4. While the squash roasts, toast the pecans in a small dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant. Transfer to a plate to cool.
  5. In the same skillet, add a drizzle of olive oil and the minced garlic. Cook for 30 seconds until fragrant, then add the chopped sage and smoked paprika. Stir for another 15 seconds. Remove from heat.
  6. In a medium bowl, combine the cooked quinoa, toasted pecans, dried cranberries, sautéed garlic mixture, softened cream cheese, shredded cheddar, and half the shredded mozzarella. Mix until evenly distributed. Taste and adjust salt and pepper.
  7. Once the squash is tender, remove the baking sheet from the oven. Carefully flip each half over using tongs. Let them cool for 5 minutes.
  8. Divide the filling evenly among the four squash halves, mounding it slightly in the center. Sprinkle the remaining mozzarella on top, then the buttered panko breadcrumbs (toss breadcrumbs with melted butter first).
  9. Return the baking sheet to the oven and bake for 15-20 minutes, until the filling is hot and bubbly and the breadcrumbs are golden brown. If the tops brown too fast, tent loosely with foil for the last 5 minutes.
  10. Let the stuffed squash rest for 5 minutes before serving. Garnish with extra fresh sage or a drizzle of balsamic glaze if desired.

Notes

Roast the squash until tender but still firm enough to hold its shape. Use room-temperature cream cheese for smooth mixing. Toast breadcrumbs with melted butter for a crispy topping. Make extra filling to bake separately. For hosting, roast squash and prep filling up to 24 hours in advance.
