Instructions

  1. Season the chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken thighs in a single layer and cook for 3-4 minutes per side, until golden brown. Work in batches if needed. The chicken does not need to be cooked through.
