These crispy spaghetti donuts combine leftover pasta with Parmesan and fresh herbs, baked to golden perfection in a donut or muffin pan. They offer a crunchy exterior with a tender, cheesy inside, perfect for snacks, brunch, or appetizers.

  • 8 ounces cooked spaghetti (al dente)
  • 2 large eggs, room temperature
  • ½ cup (50 grams) finely grated Parmesan cheese
  • 2 tablespoons mixed fresh parsley and basil, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons olive oil, plus extra for greasing the pan
  • Salt and freshly ground black pepper, to taste
  • ¼ cup (30 grams) bread crumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your donut pan or muffin tin generously with olive oil to prevent sticking.
  2. In a medium bowl, whisk together the 2 large eggs, minced garlic, salt, and pepper.
  3. Add the cooked spaghetti to the egg mixture and toss well to coat every strand.
  4. Stir in the grated Parmesan cheese and chopped herbs gently but thoroughly.
  5. If using, fold in the bread crumbs for extra crunch.
  6. Divide the pasta mixture evenly into the donut pan cavities, packing lightly to shape the donuts without compacting.
  7. Drizzle a little olive oil over the tops of each donut to help create a golden, crispy finish.
  8. Bake for 20–25 minutes until edges are golden brown and crisp, and centers hold together when pressed gently.
  9. Let the donuts cool in the pan for 5 minutes to firm up.
  10. Carefully pop the donuts out and serve warm, optionally with marinara sauce or a light salad.

Notes

Use al dente spaghetti for best texture. Grease the pan well to prevent sticking. If mixture is too wet, add more bread crumbs; if too dry, add a splash of milk or an extra egg yolk. Let donuts cool slightly before removing to avoid crumbling. Gluten-free and dairy-free substitutions are possible.
