Instructions

  1. Preheat your skillet or griddle over medium-high heat for about 5 minutes until very hot and slightly smoking.
  2. Divide 1 pound of ground beef into 3-4 equal balls (about 4-5 oz or 115-140g each). Handle lightly to keep texture tender.
  3. Prepare buns and toppings so they are ready before cooking.
  4. Add about 1 tablespoon of neutral oil to the pan and spread evenly. Wait until it shimmers.
  5. Place each beef ball in the pan and press down firmly with a spatula to flatten to about 1/4 inch (6 mm) thickness. Hold the press for 10-15 seconds to create a crispy edge.
  6. Immediately season the exposed side with kosher salt and freshly ground black pepper.
  7. Cook patties without moving for 2-3 minutes until edges are golden brown and crispy.
  8. Flip patties gently and place a slice of cheese on each. Cook for another 1-2 minutes until cheese melts and beef is cooked through.
  9. Optionally, toast buns face down in the pan for 30 seconds or until golden and slightly crisp.
