  • Salt and freshly ground black pepper, to taste
  • 1 tsp garlic powder (optional)
  • 1 tsp onion powder
  • Vegetable oil or butter, for cooking
  • 4 cups (about 450g) frozen French fries or homemade fries
  • 1 cup shredded cheddar cheese
  • 2 green onions, thinly sliced
  • Cooked bacon bits (about 4 slices) – optional
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp hot sauce (optional)
  • 1 tsp pickle juice or finely chopped pickles

Instructions

  1. Preheat your oven to 425°F (220°C) or prepare your air fryer according to the manufacturer’s instructions. Spread your frozen fries evenly on a baking sheet lined with parchment paper. Bake for 20-25 minutes until crispy and golden brown, flipping halfway through for even cooking.
  2. While fries bake, prepare the special sauce: In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, smoked paprika, garlic powder, hot sauce, and pickle juice. Taste and adjust seasoning if needed. Set aside in the fridge to let flavors meld.
  3. Shape the ground beef into 6 loosely packed balls (about 2.5 oz / 70g each). Avoid overworking the meat to keep patties tender.
  4. Heat your cast iron skillet over medium-high heat and add a small amount of vegetable oil or butter to coat the surface.
  5. Place 2-3 beef balls in the pan (depending on pan size), leaving space between them. Using a sturdy spatula or the bottom of a heavy pan, smash each ball down firmly until patties are about ¼ inch (6mm) thick.
  6. Season the patties generously with salt, pepper, garlic powder, and onion powder.
  7. Cook the patties for 2-3 minutes without moving them, until edges are deeply browned and crispy. Flip carefully and cook another 1-2 minutes for medium doneness. Add cheese on top just after flipping if desired.
  8. Remove the cooked patties from the skillet and keep warm on a plate covered loosely with foil.
  9. Once fries are done, transfer them to a large serving plate or platter.
  10. Layer the cooked smash burger patties over the fries.
  11. Sprinkle shredded cheddar cheese immediately so it melts over the warm patties and fries.
  12. Scatter sliced green onions and crispy bacon bits on top.
  13. Drizzle the special sauce generously over the loaded fries and serve right away.

Notes

Use an 80/20 ground beef blend for juicy, crispy patties. Do not overwork the meat when forming balls. Preheat pan well for a good crust. Smash patties firmly and quickly. Add cheese after flipping for perfect melt. Bake fries in a single layer to keep crispy. Special sauce can be made ahead and stored up to a week. For gluten-free, ensure fries and condiments are gluten-free. For dairy-free, use vegan cheese and mayo alternatives.
