  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese (small-curd preferred)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • Thinly sliced green onions for garnish
  • Optional: jalapeño slices, diced tomatoes, black beans

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, toss 2 cups shredded cooked chicken with 1/2 cup buffalo sauce until evenly coated. Set aside.
  3. Spread 6 cups tortilla chips in a single layer on a large rimmed sheet pan, avoiding overlap.
  4. Sprinkle half of the shredded cheese blend (1 cup sharp cheddar and 1 cup Monterey Jack) evenly over the chips.
  5. Scatter the buffalo chicken evenly over the cheese and chips.
  6. Sprinkle the remaining cheese over the chicken and chips.
  7. Bake in the oven for 10-12 minutes, until cheese is melted and bubbly and some chip edges turn golden brown.
  8. While baking, whisk together 1/2 cup sour cream, 1/4 cup mayonnaise, and 1/4 cup crumbled blue cheese in a small bowl. Thin with 1-2 tablespoons milk if needed for drizzling consistency.
  9. Remove nachos from oven and immediately drizzle the blue cheese sauce over the top.
  10. Garnish with thinly sliced green onions and optional jalapeño slices.
  11. Let cool for a few minutes before serving.

Use sturdy, thick-cut tortilla chips to prevent sogginess. Layer cheese beneath toppings to keep chips crispy. If chips toast too quickly, reduce oven temperature to 375°F.
