Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan thoroughly and line with parchment paper if desired.
  2. In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Add eggs one at a time, beating well after each addition. Mix in pumpkin puree and vanilla extract until smooth.
  4. In a separate bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing on low speed or stirring by hand until just combined. Do not overmix.
  6. In a medium bowl, combine 1 cup flour, brown sugar, cinnamon, and chopped pecans. Pour in melted butter and mix with a fork or pastry cutter until coarse crumbs form.
  7. Pour batter into the prepared pan and spread evenly. Sprinkle streusel generously over the top, pressing down slightly to adhere.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Cover loosely with foil if browning too quickly.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
