Crispy Phyllo-Wrapped Baked Brie Wheel Recipe with Hot Honey and Pistachios

A quick and easy appetizer featuring a creamy brie wheel wrapped in crispy phyllo dough, drizzled with spicy hot honey and topped with crunchy toasted pistachios. Perfect for entertaining and impressing guests with minimal effort.

  • 8 oz (225 g) Brie cheese wheel
  • 8 sheets phyllo dough, thawed
  • 4 tbsp (60 g) unsalted butter, melted
  • 2 tbsp hot honey (honey infused with chili flakes or spicy honey)
  • 1/4 cup (30 g) chopped pistachios, shelled and lightly toasted
  • Lemon zest from 1 lemon (optional)
  • Pinch of flaky sea salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper.
  2. Carefully unroll phyllo sheets on a clean surface and keep covered with a damp kitchen towel to prevent drying.
  3. Brush melted butter over one phyllo sheet, place another sheet on top, and brush again. Repeat until you have four sheets stacked with butter in between.
  4. Place the brie wheel in the center of the stacked phyllo. Fold the edges upward, tucking and pleating the dough to fully encase the cheese. Trim excess dough if needed and brush the outside with more butter.
  5. Transfer the wrapped brie to the baking sheet and bake for 20-25 minutes until deep golden brown and crispy.
  6. While baking, toast chopped pistachios in a dry skillet over medium heat for 3-4 minutes until fragrant. Set aside to cool.
  7. Remove the baked brie from the oven and let cool on a rack for 5 minutes.
  8. Drizzle hot honey generously over the top, sprinkle with toasted pistachios, lemon zest (if using), and a pinch of flaky sea salt.
  9. Slice into wedges and serve immediately with crackers, sliced baguette, or fresh fruit.

Notes

Keep phyllo sheets covered with a damp towel to prevent drying and tearing. Brush each phyllo layer with melted butter to create crispiness and help layers stick. Watch the brie closely after 15 minutes to avoid burning; tent with foil if needed. Toast pistachios while the brie bakes to save time. For dairy-free, use vegan cheese and butter. For gluten-free, use gluten-free phyllo or rice paper sheets brushed with oil.
