Quick and easy 10-minute mini pizzas made with refrigerated biscuit dough, mini pepperoni, and mozzarella. Perfect for school lunches as they stay crispy and are easy to pack.

  • 1 tube (approx. 8-10 biscuits) refrigerated biscuit dough
  • 1 cup shredded mozzarella cheese
  • 1 package mini pepperoni slices
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Open the biscuit dough tube and separate the biscuits. Press each biscuit slightly to flatten into a 3-4 inch diameter circle.
  4. Place flattened biscuits on the prepared baking sheet, leaving an inch between them.
  5. Use a fork to poke holes all over the surface of each biscuit (docking) to prevent puffing.
  6. Sprinkle shredded mozzarella cheese evenly over each biscuit.
  7. Place 3-5 mini pepperoni slices on top of the cheese on each bite.
  8. Sprinkle with Italian seasoning, garlic powder, and red pepper flakes if using.
  9. Lightly brush the tops with melted butter.
  10. Bake for 10-12 minutes until edges are golden brown and cheese is bubbly.
  11. Cool on the pan for 2-3 minutes before serving or packing.

Notes

Ensure bites are completely cool before packing in lunchboxes to prevent sogginess. Do not add wet toppings like sauce or fresh tomatoes. For extra crispiness, transfer to a cooling rack after baking. Can be frozen unbaked or baked and reheated in an oven or air fryer.
