  • 6 bone-in, skin-on chicken thighs
  • 1.5 pounds Yukon Gold or baby red potatoes, halved
  • 4 tablespoons extra virgin olive oil, divided
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced or thinly sliced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper, plus more to taste
  • Optional: pinch of smoked paprika or red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the potatoes. Pat dry with a towel to avoid steaming.
  3. In a large mixing bowl, toss the potatoes with 2 tablespoons olive oil, 1 teaspoon salt, and ½ teaspoon black pepper. Spread evenly in a roasting pan or cast-iron skillet.
  4. Pat the chicken thighs dry with paper towels. Season generously with salt and pepper on both sides.
  5. In the same bowl, combine the chicken thighs with 2 tablespoons olive oil, minced garlic, fresh lemon juice, lemon zest, chopped rosemary, and thyme. Toss gently to coat.
  6. Place the chicken thighs skin-side up over the potatoes in the roasting pan, ensuring they are not crowded.
  7. Roast in the oven for 35-40 minutes. Halfway through (around 20 minutes), baste the chicken and potatoes with pan juices and turn the potatoes if needed.
  8. Check for doneness: chicken should reach an internal temperature of 165°F (74°C) and have golden, crispy skin. If potatoes need more time, remove chicken and roast potatoes for an additional 5-10 minutes.
  9. Remove from oven and let rest for 5 minutes to allow juices to redistribute.
  10. Serve warm with a sprinkle of fresh herbs and an extra squeeze of lemon if desired.
