Crispy Homemade Goldfish Crackers with Cheddar and Sea Salt

These crispy homemade goldfish crackers combine sharp cheddar and sea salt for a nostalgic, addictive snack that’s quick and easy to make.

  • 1 cup (100g) sharp cheddar cheese, freshly grated
  • 1 ½ cups (190g) all-purpose flour (or gluten-free flour blend for GF option)
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt, plus extra for sprinkling
  • 4 tablespoons (56g) unsalted butter, cold and cubed
  • 3 to 4 tablespoons (45-60ml) cold water
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Grate 1 cup (100g) of sharp cheddar cheese finely.
  2. In a medium bowl, whisk together 1 ½ cups (190g) all-purpose flour, 1 teaspoon baking powder, and 1 teaspoon sea salt.
  3. Add 4 tablespoons (56g) cold, cubed unsalted butter to the flour mixture and work it in with fingers or a pastry cutter until the mixture resembles coarse crumbs with pea-sized pieces.
  4. Stir the grated cheddar into the flour-butter mixture until evenly distributed.
  5. Slowly add 3 to 4 tablespoons (45-60ml) cold water, mixing gently until the dough just comes together into a shaggy, slightly crumbly dough.
  6. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  8. Roll the dough out on a lightly floured surface to about 1/8 inch (3mm) thickness. Dust lightly with flour if sticky.
  9. Cut dough into goldfish shapes using a cookie cutter or into small squares/triangles if no cutter is available. Place shapes about 1 inch apart on the baking sheet.
  10. Lightly sprinkle sea salt on top of each cracker.
  11. Bake for 12-15 minutes or until golden and crisp, checking at 12 minutes to avoid burning.
  12. Transfer crackers to a cooling rack and cool completely before storing.

Notes

Keep ingredients cold for flaky texture. Do not overwork dough to avoid toughness. Roll dough thin (1/8 inch) for crispiness. Rotate baking sheet halfway through baking for even color. Store in airtight container for up to a week or freeze for up to 3 months. Re-crisp frozen crackers in a 300°F oven for 5 minutes.
