  • 4 large croissants, preferably day-old
  • 8 thin slices of quality smoked ham
  • 4 slices Swiss cheese (Emmental or Gruyère can be used)
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey (optional)
  • Freshly ground black pepper, to taste
  • Optional: handful of baby arugula or spinach

Instructions

  1. Slice each croissant in half horizontally. Lightly toast fresh croissants for 1-2 minutes if desired to reduce softness.
  2. In a small bowl, mix 1 tablespoon Dijon mustard with 1 teaspoon honey until smooth. Set aside.
  3. Heat 1 tablespoon butter in a skillet over medium heat. Add ham slices in a single layer and cook about 2 minutes per side until edges are golden and crispy. Remove and drain on paper towels.
  4. Spread butter evenly on cut sides of croissants (about 1/2 tablespoon per half). Spread mustard-honey mixture thinly on bottom halves.
  5. Layer 2 slices of crispy ham on each croissant bottom, then add a slice of Swiss cheese. Sprinkle with black pepper and add arugula or spinach if using.
  6. Place top halves on sandwiches. Heat skillet over medium-low heat and place sandwiches in pan. Press gently with spatula and cook 3-4 minutes until bottoms are golden and crispy.
  7. Flip carefully and cook another 3-4 minutes until cheese melts and croissants are crispy on both sides. Cook one sandwich at a time if skillet is small.
  8. Remove sandwiches and let rest 1-2 minutes before serving to allow cheese to set slightly.

Notes

Use day-old croissants for better crispiness. Browning the ham adds a caramelized crunch. Medium-low heat is key to avoid burning croissants before cheese melts. For extra melty cheese, finish sandwiches in a 350°F oven for 2-3 minutes. Avoid overcrowding the pan; cook one or two sandwiches at a time. Leftovers can be refrigerated up to 2 days and reheated in the oven to restore crispiness.
