  • 1 teaspoon salt
  • 1 large egg, lightly beaten

  • 1/2 cup panko breadcrumbs

  • 1/4 cup chopped fresh parsley (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons grated Parmesan cheese (for topping)
  • 1 tablespoon olive oil spray (or regular olive oil brushed on)

Instructions

  1. Wash the zucchini and trim off the ends. Grate using the large holes of a box grater or a food processor with the grating disc. You should have about 3 to 4 cups of shredded zucchini.
  2. Place the shredded zucchini in a colander and sprinkle with 1 teaspoon of salt. Toss to combine and let sit for 10 minutes to draw out moisture.
  3. Transfer the zucchini to a clean kitchen towel. Wrap tightly and squeeze hard over the sink to remove as much liquid as possible.
  4. In a large bowl, combine the squeezed zucchini, beaten egg, 1/2 cup grated Parmesan, panko breadcrumbs, minced garlic, parsley (if using), black pepper, and paprika. Mix with a fork until well combined. The mixture should hold together when pressed; if too wet, add another tablespoon of breadcrumbs.
  5. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  6. Shape the mixture into small patties about 2 inches wide and 1/2 inch thick. You should get about 10 to 12 fritters. Place on the prepared baking sheet, leaving space between each.
  7. Sprinkle the remaining 2 tablespoons of Parmesan over the tops. Lightly spray or brush the tops with olive oil.
  8. Bake for 12 minutes, then carefully flip each fritter using a spatula. Bake for another 10 to 12 minutes, until both sides are golden brown and crispy.
  9. Let cool on the baking sheet for 2 to 3 minutes before transferring to a cooling rack. Serve warm.

Squeeze the zucchini thoroughly to remove moisture for crispy fritters. Use fresh Parmesan for best melting and flavor. Panko breadcrumbs provide extra crispiness.
