  • 1 1/4 cups (150g) all-purpose flour
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground paprika (optional)
  • 34 tablespoons (45-60ml) cold water
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Finely grate 1 cup (110g) of sharp cheddar cheese and set aside.
  2. In a large mixing bowl, whisk together 1 1/4 cups (150g) all-purpose flour, 1/2 teaspoon salt, 1/4 teaspoon ground paprika, and optional 1/4 teaspoon garlic powder.
  3. Add 6 tablespoons (85g) cold, cubed unsalted butter to the dry mix. Rub the butter into the flour until the mixture resembles coarse crumbs with small pea-sized pieces of butter visible.
  4. Stir in the grated sharp cheddar until evenly distributed.
  5. Gradually add 3 tablespoons (45ml) cold water and mix to bring the dough together. Add up to 1 tablespoon more water if needed, but avoid making the dough sticky.
  6. Shape the dough into a flat disc, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes.
  7. On a lightly floured surface, roll the chilled dough out to about 1/8-inch (3mm) thickness.
  8. Cut the dough into 1 1/2-inch (4cm) squares using a sharp knife or pizza cutter. Transfer squares to a parchment-lined baking sheet.
  9. Use a fork or skewer to poke 3-4 holes in each square to prevent puffing.
  10. Preheat oven to 350°F (175°C). Bake crackers for 15-18 minutes or until golden brown and crisp, checking after 12 minutes to avoid burning.
  11. Let crackers cool completely on a wire rack before storing in an airtight container.
