  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons pure maple syrup
  • 1 teaspoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 425°F (220°C) and let it fully preheat for at least 10 minutes.
  2. Wash the delicata squash thoroughly. Slice off the top and bottom ends, cut in half lengthwise, and scoop out the seeds and pulp.
  3. Slice each half into 1/2-inch thick rings, discarding any uneven pieces.
  4. Place the rings in a large bowl, drizzle with olive oil, and sprinkle with salt, pepper, and garlic powder. Toss until evenly coated.
  5. Line a baking sheet with parchment paper and arrange the squash rings in a single layer, ensuring they are not overcrowded.
  6. Roast for 15 minutes, then flip the rings over.
  7. While the squash roasts, whisk together maple syrup, soy sauce, rice vinegar, and red pepper flakes in a small bowl to make the glaze.
  8. Brush the tops of the squash rings with the maple glaze after flipping.
  9. Return to the oven and roast for another 10-12 minutes until the glaze is bubbly, caramelized, and the squash is tender.
  10. Remove from oven, let cool for 2 minutes, and serve warm.

Notes

Ensure the squash is dry before oiling to help it crisp up. Do not overcrowd the pan, as this leads to steaming rather than roasting. If the squash browns too quickly, lower the oven temperature by 25°F. Acorn squash can be used as a substitute but must be peeled first. This recipe does not freeze well.
