  • 1/2 cup (120ml) hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons (28g) unsalted butter, melted (or dairy-free butter)
  • For the creamy ranch dip:
  • 1/2 cup (120ml) mayonnaise
  • 1/2 cup (120ml) sour cream or Greek yogurt
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh chives, finely chopped (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, whisk together flour, water, garlic powder, paprika, salt, and black pepper until batter is thick enough to coat cauliflower without dripping.
  3. Toss cauliflower florets in the batter until evenly coated.
  4. Arrange coated florets in a single layer on the prepared baking sheet, leaving space between each piece.
  5. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  6. While baking, melt butter and mix with hot sauce to prepare buffalo sauce.
  7. Toss baked cauliflower in buffalo sauce until evenly coated.
  8. Return sauced cauliflower to the baking sheet and bake for an additional 5-7 minutes to set the sauce.
  9. Prepare the ranch dip by combining mayonnaise, sour cream or Greek yogurt, dried dill, garlic powder, onion powder, chives (if using), salt, and pepper. Chill until serving.
  10. Serve the crispy buffalo cauliflower bites immediately with the creamy ranch dip on the side.
