Crispy Bratwurst and Sauerkraut Skillet

A quick, 15-minute skillet meal featuring seared bratwurst and caramelized sauerkraut. This easy, crowd-pleasing dish is perfect for busy weeknights, potlucks, or Oktoberfest celebrations.

  • 4 to 6 fresh bratwurst links (pork or chicken)
  • 1 large jar (24 oz) sauerkraut, drained and pressed dry
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon caraway seeds
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Let bratwursts sit at room temperature for 5 minutes while prepping other ingredients. Slice onions into half-moons, drain and press sauerkraut dry, and mince garlic.
  2. Heat a large cast iron or heavy-bottomed skillet over medium-high heat. Add olive oil and butter, waiting until butter stops foaming.
  3. Place bratwursts in the pan without overcrowding. Sear for 2 minutes per side until deeply browned, then remove and set aside.
  4. Reduce heat to medium. Add sliced onions to the same pan with leftover fat. Cook for 3 minutes until softened and golden.
  5. Add drained sauerkraut, caraway seeds, bay leaf, and minced garlic. Stir and cook for 3 minutes until fragrant.
  6. Slice bratwursts in half lengthwise or into thick coins. Return them to the pan with the kraut and onions.
  7. Stir in Dijon mustard and black pepper. Cook for another 2 minutes until brats are heated through and kraut is tender.
  8. Remove bay leaf, adjust salt to taste, and serve immediately.

Notes

Ensure sauerkraut is thoroughly drained and pressed dry to prevent steaming the sausages. Do not boil the brats first; direct high heat is required for a crispy crust. This dish does not freeze well. Store leftovers in an airtight container in the fridge for up to 3 days.
