These crispy bacon-wrapped jalapeño poppers are a quick and easy appetizer combining creamy, spicy, and smoky flavors. Perfect for parties or late-night cravings, they deliver a satisfying texture and bold taste.

  • 12 medium fresh jalapeño peppers, washed and halved lengthwise
  • 8 oz cream cheese, softened to room temperature
  • 1 cup shredded sharp cheddar cheese
  • 12 slices regular cut bacon
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 2 tablespoons finely chopped fresh chives or green onions (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. Slice each jalapeño in half lengthwise and carefully scoop out seeds and membranes.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until smooth.
  4. Stuff each jalapeño half generously with the cream cheese mixture.
  5. Wrap one strip of bacon snugly around each stuffed jalapeño half, starting at the base and spiraling up, tucking the end underneath.
  6. Place the bacon-wrapped poppers on the wire rack, seam-side down.
  7. Bake for 20-25 minutes, checking after 15 minutes to avoid burning. Rotate the tray halfway through if needed.
  8. Let the poppers cool for 5 minutes before serving.
  9. Garnish with chopped fresh chives or green onions if desired.

Notes

Use gloves when handling jalapeños to avoid skin irritation. If you don’t have a wire rack, flip poppers halfway through baking for even crisping. Broil for 1-2 minutes at the end if bacon isn’t crispy enough. For less heat, remove all seeds and membranes. Cream cheese should be softened to room temperature for easier mixing.
