A nostalgic and easy-to-make crispy peanut butter and chocolate bark with a satisfying crunch from crispy rice cereal, perfect for gifting or snacking.

  • 1 cup (250g) creamy or natural peanut butter
  • 2 cups (340g) semi-sweet chocolate chips
  • 2 cups (60g) crispy rice cereal
  • 2 tablespoons (28g) unsalted butter, softened
  • ½ cup (60g) powdered sugar, sifted
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of sea salt (about 1/8 teaspoon)
  • Optional: ½ cup (60g) chopped peanuts
  • Optional: dark chocolate chips to swap half of the semi-sweet chips

Instructions

  1. Line a 9×13-inch baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine peanut butter, softened unsalted butter, and sifted powdered sugar. Stir until smooth and creamy.
  3. Add vanilla extract and sea salt to the mixture and stir to combine.
  4. Gently fold in crispy rice cereal and optional chopped peanuts, being careful not to crush the cereal.
  5. Spread the mixture evenly on the lined baking sheet to about ½-inch thickness.
  6. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth, or use a double boiler.
  7. Pour the melted chocolate evenly over the peanut butter and cereal layer and gently spread it out.
  8. Refrigerate the baking sheet for at least 1 hour until the bark is firm and the chocolate has set.
  9. Remove from fridge, peel off the parchment paper, and break the bark into irregular pieces.

Notes

If the peanut butter mixture is too soft to spread, chill it for 10 minutes before spreading. Do not over-mix the crispy rice cereal to maintain crunch. Melt chocolate in short bursts and stir often to avoid burning. Chilling for at least 1 hour is essential for proper setting. Variations include nut-free, vegan, and chocolate swaps.
