A quick and easy snack featuring crisp apple slices topped with a warm peanut butter drizzle, crunchy peanuts, chocolate chips, and coconut. Perfect for a healthy treat that feels indulgent.

  • 2 large apples (Honeycrisp or Fuji)
  • 1 tablespoon lemon juice
  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 12 tablespoons warm water
  • 1/4 teaspoon vanilla extract (optional)
  • 1/4 cup chopped peanuts
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons shredded coconut (unsweetened or sweetened)
  • 1 tablespoon chia seeds or hemp seeds (optional)
  • A pinch of flaky sea salt

Instructions

  1. Wash and dry the apples. Cut them into thin rounds, about 1/4-inch thick, removing seeds and tough core pieces. Toss the slices with lemon juice to prevent browning.
  2. Arrange the apple slices in a single layer on a serving plate, slightly overlapping them.
  3. In a small microwave-safe bowl, combine peanut butter and honey (or maple syrup). Microwave for 15-20 seconds, then stir. Add vanilla extract and 1 tablespoon warm water; whisk until smooth. Add more warm water, a teaspoon at a time, until pourable.
  4. Drizzle the peanut butter mixture evenly over the apple slices.
  5. Sprinkle chopped peanuts, mini chocolate chips, shredded coconut, and chia seeds (if using) over the apples. Finish with a pinch of flaky sea salt.
  6. Serve immediately while apples are crisp and drizzle is warm.

Notes

Best served immediately. Apples will brown and soften within an hour. For parties, slice apples and toss with lemon juice at home, but add toppings upon arrival. Toast peanuts in a dry skillet for extra flavor.
