  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup fresh basil leaves, packed and torn
  • 1 cup vegetable or chicken broth (low-sodium)
  • Salt and black pepper to taste
  • Optional: Red pepper flakes for heat
  • Optional: 1/2 tsp sugar to balance acidity

Instructions

  1. Heat butter in a large saucepan or Dutch oven over medium heat. Once melted and foaming, add minced garlic and stir constantly for about 1 minute until fragrant but not brown.
  2. Add the canned tomatoes (with juices) and broth to the pot. If using whole tomatoes, crush them with a spoon or potato masher. Bring the mixture to a gentle simmer.
  3. Reduce heat to low and simmer uncovered for 10 minutes, stirring occasionally, to allow flavors to meld and tomatoes to break down.
  4. Remove the pot from heat and let it cool slightly. Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, blend in batches in a countertop blender, venting carefully.
  5. Return the pot to low heat. Stir in the heavy cream and most of the fresh basil (reserving some for garnish). Heat through for 1-2 minutes without boiling.
  6. Season with salt and pepper to taste. Ladle into bowls and serve immediately, topped with remaining fresh basil and crusty bread.

Notes

Do not rush the garlic sautéing to avoid bitterness. Add fresh basil at the very end to preserve its color and volatile oils. If the soup is too acidic, add a pinch of sugar. For a chunkier texture, skip blending and just mash the tomatoes. Store leftovers in an airtight container in the fridge for up to 4 days. Cream may separate if frozen, so freeze without cream if planning to store long-term.
