Ingredients

Scale
  • 1/2 cup (45g) rolled oats (old-fashioned)
  • 1/2 cup (120ml) whole milk or almond milk
  • 2 tablespoons (30g) plain cream cheese, softened
  • 1/4 cup (60g) vanilla Greek yogurt
  • 1 tablespoon (15ml) honey or maple syrup
  • 1/2 cup (75g) fresh strawberries, chopped
  • 1/2 teaspoon (2.5ml) vanilla extract
  • 1/2 teaspoon lemon zest
  • 3 sheets graham crackers, crushed
  • 1 tablespoon (15g) unsalted butter, melted
  • Pinch of salt

Instructions

  1. Prepare the graham cracker crumble: Crush 3 graham cracker sheets into small crumbs using a rolling pin or food processor. Melt 1 tablespoon (15g) of unsalted butter in a small skillet over medium heat. Add the crumbs and a pinch of salt, stirring frequently, until golden brown and fragrant, about 3–4 minutes. Remove from heat and let cool.
  2. Mix the creamy base: In a medium mixing bowl, combine 1/2 cup (45g) rolled oats, 1/2 cup (120ml) milk, 2 tablespoons (30g) softened cream cheese, 1/4 cup (60g) vanilla Greek yogurt, 1 tablespoon (15ml) honey or maple syrup, 1/2 teaspoon vanilla extract, and 1/2 teaspoon lemon zest. Whisk until smooth and creamy.
  3. Add the strawberries: Fold in 1/2 cup (75g) chopped fresh strawberries. Reserve a few pieces for garnishing later.
  4. Assemble your jars: Spoon the oat mixture into 1 or 2 mason jars or airtight containers. Top each with a generous layer of the graham cracker crumble and a few extra strawberries for garnish.
  5. Refrigerate overnight: Cover and refrigerate for at least 6 hours or overnight to allow oats to soak and soften.
  6. Serve chilled: Stir gently to mix the crumble slightly into the oats, then enjoy straight from the jar.

Notes

Softening the cream cheese before mixing prevents lumps. Adjust sweetness based on strawberry ripeness. Use rolled oats for best texture. Toast graham crackers on medium heat and stir often to avoid burning. Refrigerate oats up to 3 days; add crumble fresh before serving for best crunch. Can be warmed briefly in microwave if preferred warm.
