  • ¼ cup (60g) cottage cheese
  • ¾ cup (180ml) milk of choice
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon (5ml) vanilla extract
  • 1 tablespoon (15g) chia seeds (optional)
  • Pinch of salt

Instructions

  1. Blend the pumpkin base: In your blender, combine the pumpkin puree, cottage cheese, milk, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt. Blend on high for about 30 seconds until completely smooth.
  2. Combine with oats: Pour the blended mixture into a medium bowl. Add the rolled oats and chia seeds (if using). Stir well with a whisk or spoon until every oat is coated.
  3. Divide into jars: Pour the mixture evenly into your jars or containers. Leave about half an inch of space at the top for toppings or expansion.
  4. Refrigerate overnight: Screw the lids on tightly and place the jars in the refrigerator. Let them sit for at least 6 hours, but 8-12 hours is ideal.
  5. Add toppings and serve: In the morning, give the jar a good stir. If too thick, stir in a splash of milk. Top with Greek yogurt, pepitas, cinnamon, or other desired toppings. Eat cold or microwave for 30-45 seconds if preferred.

Notes
