Ingredients

  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 tbsp olive oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1.5 lbs Yukon Gold potatoes, peeled and diced into 1/2-inch cubes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half/coconut cream)
  • 1 bunch kale (Lacinato or curly), stems removed and leaves chopped
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Red pepper flakes (optional)
  • Sour cream for garnish (optional)

Instructions

  1. Prep ingredients: Dice potatoes, chop onions, mince garlic, and chop kale. Set aside.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage, breaking it up with a spoon, and cook until browned and cooked through (5-7 minutes). Remove sausage with a slotted spoon, leaving fat in the pot.
  3. Reduce heat to medium. Add onions to the pot and cook until softened and translucent (3-4 minutes). Add garlic and cook for 1 minute until fragrant.
  4. Add diced potatoes to the pot and stir to coat in the onion mixture. Pour in the broth, scraping the bottom to release browned bits.
  5. Bring to a boil, then reduce heat to low. Cover and simmer until potatoes are tender (about 15 minutes).
  6. Optional: Use an immersion blender to partially blend the soup for a creamier texture, or mash some potatoes against the side of the pot.
  7. Stir in the heavy cream and cooked sausage. Heat through for 2-3 minutes without boiling.
  8. Stir in the chopped kale and let it wilt in the hot soup for 2-3 minutes until bright green and tender-crisp.
  9. Season with salt, pepper, thyme, and red pepper flakes to taste.
  10. Serve immediately, garnished with sour cream or extra kale if desired.

Notes

Add the kale at the very end of cooking to preserve its vibrant color, crisp texture, and nutritional value. Do not boil after adding cream to prevent curdling. For a vegetarian version, substitute sausage with smoked paprika and mushrooms, and use vegetable broth.
