Creamy Roasted Cherry Tomato Pasta with Whipped Ricotta

A quick and easy pasta dish featuring sweet roasted cherry tomatoes, silky whipped ricotta, and fresh basil, perfect for a comforting yet fresh dinner.

  • 2 cups (about 300g) cherry tomatoes, fresh and ripe
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup (250g) ricotta cheese, whole milk ricotta preferred
  • A handful of fresh basil leaves, torn or chiffonade
  • 8 ounces (225g) spaghetti or linguine
  • Lemon zest from 1 lemon (optional)
  • 1/4 cup (25g) grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rinse and pat dry the cherry tomatoes. Toss them with olive oil, minced garlic, red pepper flakes (if using), sea salt, and black pepper. Spread in a single layer on the baking sheet.
  3. Roast the tomatoes in the oven for 15–20 minutes until they burst and caramelize.
  4. While tomatoes roast, bring a large pot of salted water to a boil. Cook pasta until just al dente, about 8–10 minutes. Reserve 1/2 cup (120ml) pasta water and drain.
  5. Place ricotta in a mixing bowl and whip with a hand mixer or electric whisk until smooth and fluffy, about 2–3 minutes. Add a pinch of salt and 1 teaspoon olive oil for silkiness.
  6. Return drained pasta to pot or large bowl. Add roasted tomatoes with juices and toss gently, adding reserved pasta water gradually to loosen sauce.
  7. Dollop whipped ricotta over pasta and fold in half of the basil leaves. Add lemon zest if desired. Adjust seasoning with salt and pepper.
  8. Serve immediately, topped with remaining basil, Parmesan cheese (if using), and a drizzle of olive oil.

Notes

Do not overcrowd the roasting pan to ensure tomatoes caramelize properly. Strain ricotta before whipping if watery. Reserve pasta water to help sauce cling to noodles. Whip ricotta with olive oil and salt for a silkier texture. Cook pasta al dente to avoid mushiness.
