Creamy Pumpkin Gnocchi: Easy Sage Brown Butter Recipe

A comforting and rustic dish featuring pillowy soft gnocchi made with roasted sugar pumpkin, tossed in a nutty sage brown butter sauce with parmesan cheese.

  • 2 pounds Sugar Pumpkin (Sugar Pie Pumpkin)
  • 2 cups All-Purpose Flour
  • 1 large Egg
  • 1 teaspoon Salt
  • A tiny pinch of Nutmeg
  • 1/2 cup Unsalted Butter
  • 1 cup Fresh Sage Leaves
  • 1/2 cup Parmesan Cheese, freshly grated
  • Optional: Toasted chopped Walnuts
  • Optional: Splash of Heavy Cream

Instructions

  1. Preheat oven to 400°F (200°C). Cut pumpkin in half, scoop out seeds, and cut flesh into 2-inch chunks. Place cut-side down on a baking sheet and roast for 45 minutes until tender.
  2. Scoop soft pumpkin flesh from skins and blend in a food processor until smooth. If too wet, squeeze out excess moisture with a paper towel.
  3. In a large bowl, mix flour and salt. Make a well and add egg, nutmeg, and pumpkin puree. Mix with a fork, then knead gently by hand until dough comes together. Do not overwork.
  4. Roll dough into 1-inch thick ropes on a floured surface. Cut into bite-sized pieces. Optionally roll over a fork for ridges. Place on a floured tray and cover.
  5. Bring a large pot of salted water to a boil. Drop gnocchi in; they are done when they float to the surface (about 2-3 minutes). Remove with a slotted spoon.
  6. In a skillet, melt butter over medium heat. Add sage leaves and cook until butter turns golden brown and smells nutty. Toss in boiled gnocchi and parmesan cheese. Serve immediately.

Notes

Do not overmix the dough to avoid tough gnocchi. Watch the butter closely as it burns quickly. Pumpkin moisture varies, so adjust flour as needed. For gluten-free, use a 1:1 GF flour blend. For dairy-free, use vegan butter and nutritional yeast.
