  • ½ cup (120ml) milk (any kind; whole milk for extra creaminess)
  • ¼ cup (60g) plain yogurt (Greek yogurt recommended)
  • 2 tablespoons (32g) creamy natural peanut butter
  • 1 medium ripe banana (the browner, the better)
  • 1 tablespoon (15ml) maple syrup or honey (optional, adjust to taste)
  • 1 tablespoon (12g) chia seeds (optional but highly recommended)
  • Pinch of sea salt or kosher salt

Instructions

  1. Mash the banana: In your jar or container, add the peeled banana. Use a fork to mash it thoroughly into a mostly smooth paste with a few tiny lumps.
  2. Add the wet ingredients: To the mashed banana, add the milk, yogurt, peanut butter, and maple syrup (if using). Whisk with your fork until the peanut butter is mostly incorporated.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds, and a tiny pinch of salt. Stir everything together until all the oats are fully coated in the liquid.
  4. Seal and shake (or stir): Put the lid on your jar tightly and shake for 10-15 seconds. If using a bowl, stir vigorously.
  5. Refrigerate overnight: Place the jar in the refrigerator for at least 6 hours, but overnight (8-12 hours) is best.
  6. Serve cold or warm: In the morning, stir the oats. If too thick, add 1-2 tablespoons of milk. Eat cold or microwave for 45-60 seconds for a warm breakfast.
  7. Add toppings (optional): Swirl extra peanut butter, add banana slices, sprinkle chia seeds, drizzle honey, or add chopped dark chocolate or granola.

Notes

The mixture will look very liquidy when first refrigerated; this is normal. The oats and chia seeds will absorb the liquid overnight. For best results, use a very ripe banana with brown spots. Chia seeds are the secret to a thick, pudding-like texture. This recipe can be multiplied for meal prep and keeps in the fridge for up to 5 days. Do not freeze.
