  • 1 medium ripe banana, mashed
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts, dark chocolate chips, cinnamon

Instructions

  1. Mash the banana thoroughly in a small mixing bowl until smooth.
  2. Add milk, peanut butter, maple syrup (or honey), and vanilla extract to the mashed banana. Whisk until the peanut butter is fully incorporated and the mixture is smooth.
  3. Stir in rolled oats, chia seeds (if using), and a pinch of salt until all oats are coated.
  4. Pour the mixture into a mason jar or airtight container, leaving about an inch of space at the top.
  5. Screw on the lid and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. The next morning, stir the oats. If too thick, add a splash of milk. Add desired toppings and enjoy cold or warm (microwave 30-45 seconds).

Notes

For best texture, use rolled oats (not instant or steel-cut). Mash the banana thoroughly for even sweetness. Chia seeds add thickness and nutrition but are optional. Oats keep in the fridge for up to 5 days, but are best within 2-3 days. To warm, microwave for 30-45 seconds.
