  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 4 cups fresh baby spinach or 1 cup frozen spinach, thawed and drained
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces uncooked penne pasta
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Pat the chicken pieces dry and season with salt, pepper, and half the Italian seasoning.
  2. Heat olive oil over medium-high heat in a large deep skillet. Add chicken pieces and cook until golden brown on all sides but not fully cooked through, about 4-5 minutes. Remove chicken and set aside.
  3. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet and stir for 1-2 minutes until fragrant.
  4. Pour in chicken broth and bring to a gentle boil. Add uncooked penne pasta, stir to submerge, cover with lid, and simmer for 10-12 minutes, stirring occasionally.
  5. When pasta is nearly tender but still firm, add chicken back to the skillet along with spinach. Stir gently and heat through for 3-4 minutes until spinach wilts.
  6. Lower heat to medium-low. Pour in heavy cream and sprinkle grated Parmesan cheese. Stir continuously until sauce thickens and coats pasta, about 3-5 minutes. Adjust seasoning with salt, pepper, and remaining Italian seasoning.
  7. Remove from heat and garnish with fresh basil leaves if desired. Serve immediately.

Notes

Use chicken thighs as an alternative to breasts, adjust cooking time accordingly. Use gluten-free pasta or dairy-free cream alternatives for dietary needs. Stir gently when adding cream and cheese to prevent sauce separation. If sauce is too thin, simmer uncovered briefly; if too thick, add broth or cream. Avoid overcrowding the pan to properly brown chicken.
