  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 teaspoon smoked paprika (optional)
  • 1/2 cup sun-dried tomatoes, chopped (jarred in oil recommended)
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 cup heavy cream or half-and-half
  • 1/2 cup chicken broth (low sodium preferred)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (or mix of basil, oregano, thyme)
  • 2 tablespoons fresh basil, chopped (optional)
  • 1 tablespoon butter

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and smoked paprika if using.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering (about 2 minutes). Add chicken breasts and cook for 4-5 minutes per side until golden brown. Remove chicken and set aside.
  3. Lower heat to medium. Add butter, then toss in minced garlic and chopped shallots. Stir frequently for about 1-2 minutes until fragrant and translucent.
  4. Stir in the chopped sun-dried tomatoes and cook for another minute.
  5. Pour in chicken broth and scrape up any browned bits from the pan’s bottom. Let it simmer for 2-3 minutes to reduce slightly.
  6. Stir in heavy cream and dried Italian herbs. Allow the sauce to simmer gently for 4-5 minutes, stirring occasionally until it thickens enough to coat the back of a spoon.
  7. Stir in grated Parmesan cheese until melted and combined. Add chopped fresh basil. Taste and adjust seasoning with salt or pepper if needed.
  8. Nestle the seared chicken breasts into the sauce. Cover and let simmer gently on low heat for 5-7 minutes until chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  9. Spoon plenty of the creamy sun-dried tomato sauce over the chicken. Let the dish rest for a couple of minutes before plating.

Notes

If the sauce is too tangy, add a small pinch of sugar to balance acidity. Avoid overcrowding the pan when searing chicken. Dry chicken breasts before searing for better crust. Stir sauce often after adding cream to prevent burning. For dairy-free adaptations, use coconut milk or cashew cream and nutritional yeast instead of Parmesan.
